Organic matcha vegan biscuits with chocolate chips




New cookie recipe, this time combining matcha with dark chocolate chips, but the new thing is that this recipe is entirely vegan, and it's every bit as good as the previous one: the texture is very crispy around the edges and soft in the centre, with a very crumbly side that stands out, which I love.
The matcha is pronounced but not excessively so, and there is a lovely touch of indulgence with the dark chocolate chips.


For this recipe for vegan matcha chocolate chip cookies, I used Kumiko Matcha's organic Saemidori matcha, but you can also realise it with organic premium matcha or ultra-premium matcha.
Recipe for vegan matcha cookies with chocolate chips

Ingredients for 10 vegan matcha cookies with chocolate chips
- 100g organic margarine (70% mg) at room temperature (soft)
- 40g organic white sugar
- 50g of organic cannonade
- 50g organic applesauce with no added sugar
- 30g of organic almond powder
- 10g of organic premium matcha or organic Saemidori matcha
- A generous pinch of organic salt
- 160g organic T55 flour
- 1/2 teaspoon organic baking powder
- 75g of organic dark chocolate chips (milk-free)
Vegan matcha chocolate chip cookie recipe
Work the margarine at room temperature until it is soft. Add the white sugar and brown sugar and mix well until you obtain a creamy texture. Add the unsweetened applesauce, almond powder, then the matcha and salt. Finally, using a spatula, fold in the flour, baking powder, and dark chocolate chips.






Divide the cookie dough into 50g pieces and roll them into small balls with your hands. Place them on a baking sheet lined with parchment paper, spacing them well apart, then flatten them with a flat surface (a small jam jar lid, for example) to obtain nice, round cookies.



Bake the cookies at 170°C for 14 to 18 minutes (depending on how soft you like them). Remove them from the baking sheet as soon as they come out of the oven. Let them cool completely.

I recommend eating them quickly to fully enjoy their crispy-soft texture. However, you can store them in an airtight container.
