This award recognizes a ceremonial grade matcha which reveals all the purity of the Saemidori cultivar: bright green colour, intense umami and exceptional richness in amino acids.

Born from a cross between the Asatsuyu and Yabukita varieties, this cultivar combines aromatic fineness with a remarkable taste profile. Its delicate cultivation—sensitive to frost—makes it a exceptional matcha due to its rarity.

Like any plant, the tea plant is made up of several varieties known as cultivars or cultivars. This is comparable to the world of wine with Chardonnay and Merlot cultivars; or for fruit trees, we have Gala apples, Granny Smith apples, etc.

Most matcha teas are blends or blends from several cultivars (often predominantly Yabukita) to obtain a consistent taste regardless of the harvest year. This is the case with our very popular and appreciated organic premium matcha tea.

A single cultivar cultivar: Saemidori

Here we have a single-cultivar matcha single cultivar Saemidori, from a unique "single origin" terroir in Kagoshima. It’s very special to be able to taste the pure cultivar.

And I’m really very proud of this organic Saemidori matcha, which has become one of our community’s favourites. The quality is exceptional. Each sip is a journey of flavour.

It had been my dream for years: to find a matcha that would allow me to taste a single pure cultivar, de ultra-high quality (comparable to our ultra-premium organic matcha), at a super affordable price. Saemidori - さえ (Sae): clarity, みどり (Midori) the green colour, the freshness of young shoots.

Adapted mainly to the hot climate of southern Japan, the Kagoshima Prefecture is the unique terroir of this matcha.

The Saemidori cultivar

✅ Advantages: Beautiful green colour, exceptional aroma and umami taste - highest quantity of amino acids.

👎 Weaknesses: Very susceptible to frost and wind damage.

📚 History: A cross between the Asatsuyu and Yabukita cultivars to combine the quality of the former with the yield of the latter - cultivar #4 registered in 1990.

To honour these exceptional organic matcha teas, you need packaging that lives up to the contents. That's why I asked my favourite tattoo artist, Neco, to design the packaging illustrations to make them as beautiful objects.

Neco is a Japanese tattoo artist living in Paris (she also says she is a cat).

The concept: Neco designed kabuki eyes with the feminine energy and umami of Saemidori matcha in mind, and the more masculine energy and powerful velvety texture of Okumidori.

I love single-varietal matcha, and some of the best matcha in the world (like our hyper-premium organic matcha) are blends of several high-quality cultivars. With these matcha teas, you can recreate a matcha tasting experience,

  • by comparing the two matcha Saemidori and Okumidori separately
  • then by testing one 50:50 mix and create your own combination!

It's great to taste a blend when you've already tasted the individual components! This allows you to refine your palate so you can really taste the two distinct flavors and then experience the strengths of each cultivar at the same time in the blend.

I recommend testing these three preparation methods:

  • 🍵 Traditional preparation : to prepare traditional matcha tea, use 1 to 2 grams of powder for 80mL of hot water at 70-80°C - this is the preparation we enjoy most often, called usucha.
  • ☕️ Matchaspresso : with 1g of matcha for a tiny bit of water, just enough to fill an espresso cup and give it an intense flavor.
  • 🥛 Latte : froth 2 to 3 grams of powder with 45 mL of water, then pour into a large glass with plant-based milk. Delicious hot or cold.
