What is a chasen, or matcha tea whisk?

A matcha whisk, called chasen in Japanese, is a bamboo utensil used to prepare matcha, and is traditionally used during Japanese tea ceremonies. 

It has a large number of strands, often between 60 and 100 finely cut strands, which facilitate the emulsification of hot water with the matcha powder and promote the formation of a light and creamy froth on the surface of matcha.

How do I choose my bamboo whisk?

  • Quality makes the difference: The care taken in manufacturing the bamboo strands directly influences the formation of the much sought-after froth. A good chasen is essential for making a successful matcha.

How do I care for my matcha whisk?

  • Before use: Soak it in warm water to prevent the strands from breaking.
  • After use: Simply rinse with clean water to remove tea and lumps, then leave to air dry.
  • Storage: Store away from light and heat sources to prevent mold and drying out. Use at least once a week to maintain the natural moisture of the bamboo.
  • The right thing to do: Place your whisk on a naoshi (whisk holder) to preserve the shape and elasticity of the strands, which are essential for obtaining a beautiful froth.

How do you make matcha tea foam?

To obtain a beautiful creamy froth:

  1. Use the right proportions: add enough matcha and not too much water.
  2. Check the temperature: the water should be between 70-80°C (when there is no more steam escaping).
  3. Helpful tip: start with a little cold water to mix well, then add the hot water.
  4. Whisk correctly: use a bamboo whisk (chasen) with a smooth motion, about one back-and-forth movement per second for at least 1 minute.

Note: froth is not an indicator of matcha quality—in Japan, some tea schools don't even froth their matcha!
