Matcha raspberry cake: a delicious homemade recipe!
A very pretty two-tone cake, moist and, above all, naturally coloured and flavored with matcha and raspberry. You can taste both flavours perfectly; it's really delicious (and so moist that it melts in your mouth...).
I think the visual result is really stunning, but the recipe is child's play: a very classic cake base that is divided into two parts, to which raspberry purée and matcha are added.
For a beautiful green colour and a delicious matcha flavor, I recommend mixing organic culinary matcha tea and organic premium matcha tea.
The recipe is for two small cakes measuring 20x5x5 cm or one large cake of traditional size.

Recipe for two-tone matcha raspberry cake
Whisk the eggs with the sugar, add the oil, salt, then the flour and baking powder.
Divide the dough into two equal parts and add the raspberry purée to one of them (you can add a pinch of red food coloring to enhance the colour, but this is not necessary).
In the other, add the matcha previously diluted in a little milk and the 100g of milk. To prevent the two mixtures from mixing during baking, add 15g of flour to the matcha cake mixture.
In a buttered and floured cake mould, pour in the matcha batter, then the raspberry batter.

Bake for 30 minutes at 160°C for small cakes measuring 20x5x5cm and 40 minutes for a large cake of traditional size.
Once out of the oven, allow the two-tone matcha and raspberry cake to cool slightly before removing it from the pan.
Then let cool completely before tasting.
This cake keeps perfectly well in cling film at room temperature.
Good luck!
