The best for introducing matcha tea

Un exceptional matcha, grown on the island of Kyushu by our partner farmers. Harvested once a year by hand, this rare tea is selected and blended to ensure consistent quality every year.

The leaves, shade-grown for 4 to 6 weeks, are rich in chlorophyll and nutrients. Carefully processed, they become an intensely green matcha, with an ultra-fine texture and a floral, smooth, and umami taste.

The magnificent tea fields.

Here I am with Daishi-san and the “tea master”, who is also the brother of the company’s president. He is the one who selects the leaves and does the premium blend.

The result is this organic premium matcha tea from Japan. It comes from the largest organic matcha tea producer in Japan, with just over 200 organic farms on the island of Kyushu in the south of Japan.

We selected and tasted a few tea leaves from the April harvest. You can see in the photo, we can clearly tell the difference between the leaves at the bottom, which are rather “yellow”, and the ones at the top right, which are very green.

Speaking of harvesting, for organic premium matcha there is one harvest per year. This is the standard for organic premium matcha teas. And it's a completely opposite approach to most matcha tea producers in Japan, who fill their tea fields with pesticides and chemical fertilizers and harvest at least two to three times a year to increase yields. In fact, in Japan, 98% of the matcha tea produced is dedicated to the Japanese market and only 2% is reserved for export.

With Kumiko Matcha, I only offer organic and natural products for three reasons: to protect the environment, to protect the health of the entire Kumiko community, from the farmers in the tea plantations to you, my customer, and to be a force for good in the world and be the change I want to see happen.

It is often retired women from the region who harvest the crops each year to keep themselves busy during this seasonal period.

Kumiko Matcha organic premium teas are covered for 4 to 6 weeks just before the harvest under a black net that blocks 80% of the sun’s rays.

This is to encourage the concentration of chlorophyll and because the tea plant is forced to draw more energy and nutrients from the soil since it has almost no energy from the sun.

And on top of that, it leads the plant to grow lots of new young shoots green and tender that "look for the sun". These are the leaves that are harvested for organic premium matcha tea.

Aracha leaves

After the harvest, the whole tea leaves are dried and pre-cut by the farmers. At this stage, this “raw” tea is called aracha.

The aracha leaves are taken to the “tea master”, who sorts them and selects the best leaves to create his blend.

You need to put on full protective clothing to enter the production centre.

The green tea leaves are then steamed to stop oxidation. Then they go through several machines that dry them, separate the small vegetal particles, cut and re-cut, filter and re-separate particles… several times!tencha The final product of this process is “tencha”; it looks like tea leaf confetti.

In the photo, I am manually milling the tea to reduce it to a very fine powder… matcha tea!

In fact, there are artisans who specialize in creating these matcha tea mills.

The mills are made of granite because it is une pierre “froide” which does not overheat with friction.

Artisans carve two granite stones that must fit together, with a hole in the middle to allow the tencha tea leaves to pass through.

The grooves are organised so that the matcha powder is pushed out when the top stone is rotating.

And here are the mills for Kumiko matcha.

For most lower-quality matcha teas, the mills run faster to achieve a higher yield of 50 to 60g per hour.

A mill must turn for 1 hour to grind the equivalent of a 30g tin of this premium organic matcha tea.

When the mill turns more slowly There is less heating, so the powder retains all the qualities of the raw product. What's more, when the mill turns more slowly, the powder that comes out is even finer.

The powder is collected and then passed through a centrifuge. It has filters that only allow particles with a diameter of 100 microns or less (roughly the diameter of a human hair) to pass through.

Several laboratory tests are carried out to ensure quality and organic certification.

They include a thorough check for the absence of radioactivity, pesticides, and herbicides.

Recyclable and airtight box

Finally, organic premium matcha tea is packaged in 30g tins. These tins are airtight and their composition provides better heat insulation.

In addition, they are recyclable and reusable !

I recommend reusing them to store other matcha in pouches, such as Nakai matcha, for example, or even other ingredients from your kitchen.

A rich and mellow floral taste full of umami

A delicate powder with an intense jade colour. A rich and mellow taste on the palate with a delicious flavour. Initially vegetal and herbaceous, slightly astringent with a tannic sensation next to a smooth finish. Full of umami. It is not bitter like poor quality matcha.

When whisked, this matcha produces a smooth froth. Ideal for everyday consumption.

La preparation of matcha tea is done in a bowl with bamboo utensils.

Use the spoon to put the matcha in the bowl (1 to 2 bamboo scoops), then add a little cold water and whisk the mixture with the bamboo whisk until you obtain a fine, smooth froth.

Then add hot water (caution: not boiling water). When preparing matcha tea, leave most of the bowl empty to admire the contrast of colours during your own matcha tea ritual. Note the texture and unique reflections of your matcha bowl, the bright jade green colour of the matcha.

Take a breath, and you're done. Enjoy the tasting!
