Here's a delicious little recipe that's perfect for Valentine's Day: matcha hazelnut heart financiers. Quick and easy to realise, these financiers are sure to melt in your mouth with their soft, melt-in-the-mouth texture.
In this recipe, we will use organic premium matcha.
The recipe makes 12 matcha hazelnut financiers, realised in 6.4 cm diameter heart-shaped savarin moulds.
Ingredients
The hazelnut financier maker
- 150g organic butter
- 150g organic egg whites
- 100g organic powdered sugar
- 105g of organic hazelnut powder
- A pinch of organic salt
- 70g organic T55 flour
Matcha ganache
- 80g of organic white chocolate
- 60g organic whole liquid cream
- 5g of organic premium matcha
Preparation
The hazelnut financier maker
To realise brown butter: in a small saucepan, cook the butter over medium heat. It will begin to crackle, become coloured, and take on a nutty aroma. Then suddenly, it will stop crackling. At that point, you can remove the pan from the heat and let it cool in a container.
Whisk the egg whites by hand with the powdered sugar (without beating them), then add the hazelnut powder, salt, cooled brown butter, and finally the flour.
Pour the hazelnut financier mixture into the heart-shaped savarin molds until they are 3/4 full and bake for 20 minutes at 180°C.
Let them cool after removing them from the oven before removing them from the pan. Then, help them to create a flat surface by cutting off the tops of the financiers with a serrated knife.
Matcha ganache
Heat the liquid cream with the ultra-premium matcha without boiling it, whisking well to dissolve the matcha. Then pour over the previously melted white chocolate, in several stages, to obtain a smooth ganache.
Allow to cool slightly before pouring the ganache into each of the hazelnut financiers.
Place in the refrigerator and allow to crystallize for at least 2-3 hours.
Remove the matcha hazelnut financiers from the refrigerator at least 45 minutes before tasting so that they come to room temperature and you can enjoy their soft, melt-in-the-mouth texture.

Small, melt-in-the-mouth organic matcha, lemon and poppy seed financiers that are highly original. The acidity of the lemon combined with the matcha creates a superb taste sensation. It's a combination that you don't see very often, but one that deserves to be explored further. đ
I added blue poppy seeds for that little crunch I love so much. The whole thing was divine!
As with many of my matcha recipes, I made a blend with organic premium matcha and organic culinary matcha (this gives me a nice green colour and a balanced combination of bitterness and aromatic power from matcha).
Ingredients
The recipe given is for about fifteen matcha, lemon, and poppy seed financiers.
- 140g organic butter
- 200g organic powdered sugar
- 100g organic flour
- 150g organic egg whites
- 150g of organic almond powder
- Zest and juice of one organic lemon
- 5g of organic premium matcha
- 5g of organic culinary matcha
- 35g of organic blue poppy seeds
Preparation
Start by realising brown butter: in a small saucepan, cook the butter over medium heat. It will begin to sizzle, become coloured, and take on a nutty aroma. Then suddenly, it will stop sizzling. At that point, remove the pan from the heat and let it cool.
In a bowl, froth the egg whites with the powdered sugar, then add the almond powder, lemon zest and juice, salt, and matcha. Next, stir in the flour and finish by adding the cooled brown butter and blue poppy seeds.
Fill the financier moulds and bake at 170°C for about 10 minutes.
Allow to cool before removing from the mold and cool on a wire rack.
Enjoy quickly to appreciate its full flavor. Matcha financiers, lemon financiers, and poppy seed financiers can also be stored in an airtight container at room temperature.

Who said matcha couldn't be paired with red berries? These raspberry matcha financiers are a real taste sensation, combining the sweetness of matcha with the refreshing tartness of raspberries. A delight to be enjoyed without moderation!

Ingredients
- 140g of semi-salted butter
- 200g powdered sugar
- 100g of flour
- 150g egg whites
- 150g of almond powder
- 5g of culinary matcha
- 125g raspberry purée
- 50g of fresh raspberries
- A few slivered almonds
Preparation
- Brown butter: First, realise brown butter. In a saucepan, melt the butter over smooth heat until it turns a hazelnut colour and develops a characteristic aroma. Set aside.
- The dry mixture: In a bowl, mix the flour, almond powder, and matcha powder.
- The wet mixture: In another bowl, beat the egg whites with the icing sugar until stiff. Delicately fold in the dry mixture, then the cooled brown butter.
- Adding the raspberries: Delicately fold the raspberry purée into the batter. Set aside a few fresh raspberries for decoration.
- Baking: Preheat your oven to 180°C. Divide the batter between buttered financier moulds. Bake for 10-12 minutes, or until golden brown.
- Finishing touches: Remove the financiers from the oven and let them cool for a few minutes before removing them from the pan. Decorate them with a few fresh raspberries and slivered almonds.

- Raspberry purée: You can use homemade or store-bought raspberry purée.
