Matcha tea tiramisu with organic matcha tea and red berries: the recipe

Tiramisu is one of those desserts that I consider a great classic to finish off a family lunch or dinner. It's a recipe that I love so I'm really happy to present today the recipe for tiramisu with organic matcha created by Sabine.
For 6 persons :
- 3 teaspoons of ultra-premium organic matcha tea + a little extra for sprinkling
- 500 g of organic mascarpone
- 3 eggs organic
- 60 g of organic brown sugar
- 24 organic spoon cookies
- 100 g of organic red fruits (strawberries, blueberries, etc.) + extra for decoration
- Amaretto or kirsch (optional)

Separate the egg whites from the yolks. Hand whisk the yolks with the brown sugar. Add the mascarpone and the ultra-premium organic matcha tea and continue to whisk to obtain a homogeneous mixture. Whip the egg whites until stiff with a pinch of salt.
Mix the egg white mixture with a spatula (no whisk) with the matcha tea mascarpone mixture. Quickly dip the cookies in the kirsch or Amaretto (optional).
Line the bottom of the mold with a first layer of cookies, then a layer of matcha tea mascarpone. Add a layer of red fruits (cut the strawberries into strips).
Spread a new layer of matcha tea mascarpone. Put a last layer of cookies and spread the rest of the mascarpone preparation with matcha tea.
Sprinkle with a little ultra-premium organic matcha tea and garnish with some fruit. Leave in the fridge for at least 12 hours before serving.
