A pure cultivar organic matcha

This organic matcha from Japan highlights a unique cultivar : Yabukita, sourced from the best leaves grown by Nakai-san in Wazuka, in a "single origin" terroir.

It offers exceptional quality and excellent value for money. Each cup reveals a rich flavour palette : umami, green notes, mineral, earthy, nutty, with a sweet finish of red berries.

Matcha is the result of a close collaboration between the farmer (who grows according to organic standards) and the producer (who turns the leaves into high quality matcha). This partnership guarantees consistency in the product’s excellence.

An exceptional organic matcha

With this new organic matcha from Japan, my goal is to help people discover matcha now pure Yabukita cultivar, with a level of quality exceptional and good value for money exceptional.

Like any plant, the tea plant is made up of several varieties known as cultivars or cultivars. This is comparable to the world of wine with Chardonnay and Merlot cultivars; or for fruit trees, we have Gala apples, Granny Smith apples, etc.

Most matcha teas are blends or blends of several cultivars (often predominantly Yabukita) to achieve a consistent taste whatever the harvest year. This is the case with our very popular and much-loved organic premium matcha.

Here we have a 2022 vintage matcha with a single cultivar Yabukita, made from the highest-quality leaves from the unique terroir, "single origin" of our partner farmer Nakai-san in Wazuka. It is very special to be able to taste the pure cultivar.

The cultivation of organic tea plants to create super high-quality tencha and its transformation into matcha are two different professions which require skills and equipment completely different.

For the farmer who grows tea The challenge is to take care of your plants. to achieve a high quality harvest every season. Weather conditions change every year, and frost, insects, plant size, organic farming standards, the installation and management of shaded areas before harvest, and the harvest itself are all challenges that tea plant farmers face in order to produce a tencha of the highest quality.

For the producer the challenge is to take this harvest and turn it into delicious matcha: sorting the harvested leaves by grade (or quality), removing impurities, separating the different parts of the leaf (the petiole or stem, the veins, and the blade, i.e. the "flesh" of the leaf – this is the most desirable part for producing matcha tea), then grinding it into powder, maintaining the machines and equipment such as the granite mills that carry out these processes, and packaging into pouches or tins – and all of this in accordance with the specifications and the high standards of organic farming certification.

This is why many farmers operate in long-term partnership with one or more producers who commit to buying the farmer's crops every year at guaranteed prices that are acceptable to both parties. In this arrangement, which benefits both the farmer and the producer, the producer generally receives high quality harvest as a priority.

This is the case with this exceptional Yabukita matcha: high quality tea leaves from tea plants. grown by our partner farmer Nakai-san and transformed by our partner producer into an absolutely delicious and captivating organic matcha.

This Yabukita matcha is of such high quality that it will take you on a taste journey of umami flavours. When you open the pouch, you are immediately struck by the aromatic richness who escapes.

When preparing, add a dash of cold water and it will release powerful green notes. The tasting is silky and there is a tonus contributed by mineral notes, a slightly earthy universe, nutty flavours, which then give way to a sweet finish with notes of red berries.

Usucha, koicha, and cold brew preparations

I recommend testing these three preparation methods:

  • for prepare matcha tea usucha, use 1 to 2 grams of matcha powder for 80mL of hot water at 70°C - this is the common preparation for matcha and the one we use for the most frequent tastings.
  • thick preparation koicha : use 4-5g for 30mL of water at 80°C
  • in summer try a cold preparation coldbrew : shake 1-2g in 250mL of cold water in a shaker, it's very refreshing and delicious
