A prestigious and exceptional matcha

This matcha Samidori from Furukawa-san is incredibly unique. Its intense flavour is perfectly balanced while being deep and complex, with an umami taste and marine flavours which dance together on the palate.

The green colour is vibrant and sunny, the scent is heavenly, like smooth flowers in the air. It's a truly matcha. unique and special which must be experienced to be fully appreciated.

Since our first meetings I’ve been dreaming of offering his matcha "single origin - single cultivar" (single terroir and single cultivar) to our community. And that day has arrived! Since 2018, Furukawa-san has put one of his plots into conversion to organic farming standards, and the 2020 vintage was the first experimental edition of Furukawa-san’s "matcha in conversion".

After the waiting period of a minimum of 3 years between the moment when the plot is put into conversion and the moment when organic certification can be issued, Furukawa-san successfully obtained Japanese JAS certification. This is the equivalent of European organic certification, and we were able to import this batch with the "European organic" logo.

As this is a project that is still experimental and small-scaleQuantities are limited for this rare and special matcha that I recommend. for someone who already enjoys matcha tea.

This bundle of matcha from Furukawa-san is the result of generations of expertise applied to pushing the quality of matcha to the highest level and now in transition to organic. That's just exceptional..

This is a 100% Samidori cultivar matcha. It is not a blend like our organic premium matcha, or a native Zairai cultivar like Tokuya-san's matcha. Here, we taste a single cultivar grown from identical plants propagated on a small scale on one of Furukawa-san's plots.

Furukawa-san opened his garage door and I discovered now that a dozen people were sorting tencha leaves. one by one, and only the most beautiful ones are selected.

I was warmly welcomed by this enthusiastic farmer, who showed me his plantations and his manufacturing process, and even let me take part in the harvest. I learned more about his family (all farmers before him) and his production techniques. For Furukawa-san, one of the motivations for this transition is to rediscover the original taste of matcha, the taste that his ancestors enjoyed. The challenge for him is above all to no longer use synthetic products and switch to organic farming and production processes.

In this video, I am participating in the harvest of shaded tea plants. It is May, and during this harvest period There's excitement in the tea plant fields. The leaves must be harvested while they are still tender, fresh, and at the right stage of ripeness. This means that all tea plants must be harvested at the same time! It's a very social moment and generally many retired women are involved in harvesting.

For harvesting tea leaves correctly, you need to pull on the stems that bear the new leaves. They are easy to distinguish from older leaves because they are tender and light green. Do not pick the mother stem or older leaves, which are too thick and would give the tea a bitter taste. There is no need to separate the leaves from the stems at this stage. The stems will later be used to make kukicha (茎茶), a blend of Japanese green tea and stems.

The tea grown here comes from the cultivar Samidori (さみどり), one of the four most widely grown teas in the Uji region, along with asahi (あさひ), le ujihikari (うじひかり) and the tenmyô (展茗). The distinctive feature of the cultivar Samidori is that it is easy to pick by hand (just pull lightly on the stems and they come off), and that it is very fragrant.

Here are all the steps required to manufacture the tencha :

  • steaming : the leaves are steamed to stop them oxidizing
  • preliminary drying : hot air dries the leaves
  • drying: the sheets circulate in an oven heated to 100°C
  • separation leaves and their stems

The last step will be to grinding tencha to obtain a fine powder, matcha.

Here I am talking about the techniques and methods developed by Furukawa-San for prepare for the coming harvests. In it, I mainly explain his method for fertilize the soil naturally. This producer uses traditional rice straw for shade tea plants before harvest. This step is essential in the production of matcha tea, because if the tea leaves are exposed to too much sunlight, they thicken and taste more bitter.

After harvesting, he drops the straw on the ground, where it will serve asnatural fertilizer for tea plants.

Using straw instead of the usual black covers comes at a fairly high cost, but it is said that Rice straw influences the taste of tea. giving it an even more delicious flavour.

The Furukawa Samidori 2023 matcha was the first bundle from the tea plant plot that Furukawa-san converted to organic farming since 2018.

I am very happy to support a producer who is getting into organic farming and especially someone like Furukawa-san, who is committed to competitive quality in small-scale production.

Matcha usucha - koicha - matchaspresso

For prepare a matcha tea conventional usucha, use 1 to 2 grams of matcha powder for 80mL of hot water.

Also try a "thick" koicha preparation to experience the full aroma of this matcha: add 2 to 3 grams of matcha powder for 30mL of hot water. Or a "matchaspresso" preparation with 1g of matcha for a tiny bit of water, just enough to fill an espresso cup.
