This natural vintage matcha embodies the original purity of Japanese tea. It is comparable to a natural wine: more artisanal, more tannic, with a little more character.

It is considered in its own natural category, because it is not in the "super umami" trend.

A vintage matcha

It’s a matcha that comes from Tokuya-san’s fields in the terroir of Kamo ("single origin").

It is made from a single cultivar ("single cultivar"), it’s not a blend like our organic premium matcha. This cultivar is called zairai.

The quality of his matcha becomes more refined and improves over time, and each vintage is delicious!

The distinctive feature of a "zairai" cultivar

The native Zairai cultivar is a plant that was planted and then reproduced naturally : that is, the flowering and fertilization of flowers is done with the help of pollinating insects such as bees, then the seed grows to form a new plant.

La plupart des autres fermiers préfèrent des cultivars plus uniformes et connus comme par exemple saemidori, uji-hikari, samidori, yabukita, etc. Ceux-ci sont des plants qui sont "clonés" (par diverses techniques comme des bouturages) pour que le champs entier soit composé du même patrimoine génétique. À l'inverse dans un champs de zairai natif comme celui de Tokuya-san, chaque plant est unique génétiquement car il est le fruit d'une reproduction naturelle. Chaque plant est son propre cépage unique. Un champs de zairai natif est donc comme un grand assemblage naturel de centaines de plants uniques. Tokuya-san aime ce cépage zairai natif car il est très résistant aux éléments et aux insectes tout en ayant un très bon goût.

Tokuya-san, like all farmers who go against the grain of conventional agriculture (using pesticides and chemical fertilizers), has a history and a very strong vision that he shares with us. The role of weeds for Tokuya-san

Without chemical products to exterminate "weeds" in a natural field, they proliferate. In this video, here is what Tokuya-san thinks about it.

The size of tea plants according to Tokuya-san

Tokuya-san told me about an experiment he launched last fall that will further reduce the quantities he produces. in favor of quality.

I'm telling you this story so you can view Tokuya-san as a special and amazing farmer.

So he decided to size the sides of natural tea plants :

The only “drawback” is that trimming the sides of the tea plants reduces the yield of his harvests and so he will produce even less quantity (especially since his natural zairai tea plantation is limited), in favour of superior quality and originality.

According to him, it’s a pursuit that is interesting and that drives him; that’s why he does it. I love it! That’s the kind of thing that separates a good quality matcha from an original matcha of excellent quality: the vision, originality, and passion of Tokuya-san.

Preparation tips

  • Hot preparation: use 1g for 80mL of water at 60-70°C, use a bamboo matcha whisk to mix and create a fine froth.
  • Experiment with the measurements to find the blend you like best! I recommend starting with a small amount, then increasing the dosage slightly until you find the balance that suits you, with a creamy and delicious matcha that isn't too bitter for your taste.

Letter on Tokuya-san's price philosophy

Tokuya-san wrote me a letter about the price of the matcha he offers us, and I found his perspective inspiring so I transcribed it to share it here...

My tea is not "cheap". But the price is not its selling point. Of course I know that a low-grade tea will be chosen more easily.

At the start of my project some customers found it expensive. But producing this natural matcha tea takes a lot of time. And I produce small quantities. So I didn't change my price for all that.

Now many customers want my tea. The reasons are the taste, my story, that they appreciate the tea, and that they appreciate me personally. It's not a question of price. It took me time, but it's not impossible.

When I tried to stop using agricultural chemicals and even fertiliser, lots of people told me it was impossible.

When I got divorced and was granted custody of my two children (my daughter is a 1-year-old baby), lots of people told me it was impossible to look after 2 children and work in my crops.

When I started selling my tea directly (without going through a big distributor), lots of people told me it was impossible.

But I tried. There's nothing else to do but [qu'essayer]. And I still keep trying.

I think an important thing in my life is fun.

I think you might have the same feeling.

I find it exciting to try to do what people say is impossible to do.

"It's too expensive, it's impossible to sell..." maybe that will be super fun! Because that means nobody else is doing it. If you're OK with it, I want to try with you.

I don't like a super high price with no sense at all.

But I find that this price isn't that high. An honest price.

At the beginning some people will say it's too expensive.

And there are people who will find what you do and your idea fun.
