Difference #1: Composition

The first major difference is the composition of these two teas. The organic premium matcha is a "blend" meaning a blend of several tea plant varieties. This blend is made by a tea master so that the quality of the organic premium matcha tea remains constant regardless of the year and harvest.

While the organic Ipponmatsu matcha is a single cultivar, so when you drink a cup of organic Ipponmatsu matcha you taste a single tea plant variety: the Okumidori cultivar. The special feature of a single-cultivar matcha is that it is single-vintage, so the flavors can vary depending on the year and harvest.

Difference #2: Terroir

The regions where these two matcha are produced have very different characteristics. The organic premium matcha is produced in Kyushu, an island in southern Japan. The tea plants are grown in large fields on plains. Imagine tea fields stretching as far as the eye can see all around you.

But organic Ipponmatsu matcha comes from a rare terroir in Kyoto, in the mountains of Wazuka. The small tea plots are fragmented and steep on the mountainside. It is one of the highest tea plantations in Japan. During harvest season, picking the leaves in very steep fields is a real challenge.

By the way, Ipponmatsu means "the isolated pine", a very well-chosen name 😊

Difference #3: Production

The two matcha in this duo are certified organic, that's what makes this so interesting, because they are two different ways of practicing organic farming while applying very high standards.

However, the premium organic matcha comes from the largest producer of organic matcha tea in Japan with a little over 200 organic farms. Their processing plant is equipped with cutting-edge equipment; for example, they have an entire room filled with matcha mills. These granite mills turn steadily to grind the leaves into a super-fine, electric-green powder.

By contrast, the organic Ipponmatsu matcha comes from a small farm in the mountains, at 550m altitude and run by Azuma-san. She is part of a family of 4th-generation tea growers and some plots were created 3 generations ago by her husband's grandfather.

Organic premium matcha: the perfection of balance
Preparing a Tasting

What's really interesting about this matcha duo is comparing them during the tasting. Observe the appearance, aroma, and color of each. Notice the differences in taste and note the sensations: does one seem more "raw"? Which is more enveloping? What flavors do they have?
