I met Jennifer from Jynay's Wonderwall, who prepared a delicious matcha tea tart for us to enjoy! She shares her recipe with us...

For 1 tart, you will need:
- about fifteen Petit Lu cookies
- 75g butter
- 200ml coconut cream
- 2 teaspoons of organic culinary matcha
- 4 tablespoons of agave or maple syrup, as desired
- 2g agar agar (often sold in 4g pouches)
Start by crumbling the Petit Lu cookies into a bowl and adding the melted butter to create a dough. Line the bottom of the mould and set aside in a cool place.
Mix the coconut cream with the matcha and syrup in a blender. Dilute the agar agar in a little water and bring to a boil.
Add the agar agar to the mixture and spread it over the bottom of the tart before refrigerating.
