Organic premium matcha macarons

Pretty little organic matcha macarons, soft and moist with an intense matcha tea aroma that balances perfectly with the sweetness of white chocolate.

An ideal treat for matcha enthusiasts, to be enjoyed at teatime or after a meal... A delight.

Organic premium matcha ganache

  • 280g of organic white chocolate
  • 140g organic whole liquid cream
  • 20g of organic premium matcha tea

In a small saucepan, bring the cream to a boil and pour it in three batches over the melted white chocolate.

Dilute the organic premium matcha tea by gradually pouring the white chocolate ganache over it to avoid matcha "grains." Mix and cover the mixture with plastic wrap before placing it in the refrigerator for at least 3 hours.

Matcha macaron shells

  • 84g of organic egg whites
  • 48g organic powdered sugar
  • 100g organic almond powder
  • 140g organic powdered sugar
  • 4 teaspoons of organic premium matcha tea

Sift the almond powder with the powdered sugar. Add the organic premium matcha tea.

Beat the egg whites, adding powdered sugar when they begin to froth. You will obtain a beautiful, shiny meringue.

Gradually incorporate the meringue into the almond powder/icing sugar/matcha mixture and mix everything together (using a spatula). Stop mixing as soon as the mixture forms a nice ribbon that spreads slowly when lifted.

Using a piping bag fitted with a plain nozzle, pipe the macaron shells onto a baking sheet lined with parchment paper.

Bake one tray at a time at 140°C for 20 minutes. Open the oven door slightly from time to time to allow moisture to escape and prevent the shells from cracking.

Remove the macarons from the baking sheet immediately after taking them out of the oven and let them cool completely before removing them and turning them over to fill them.

Filling matcha macarons

Détendre la ganache au thé matcha premium bio avec une spatule et la mettre en poche. Pocher une généreuse noisette de ganache sur la moitié des coques et refermer chaque macaron avec une autre coque. Pipe a generous dollop of ganache onto half of the shells and close each macaron with another shell.

Leave the filled macarons in the fridge for a day before tasting them so that the tea flavor develops and the shells melt in the mouth.
