
Sabine has concocted a delicious recipe for organic matcha tea waffles that will be absolutely perfect for breakfast, brunch or afternoon tea for the whole family!
For about 10 waffles:
- 350 g of organic flour
- 3 teaspoons of organic cooking matcha
- 100 ml of lukewarm organic milk
- 1 sachet of organic baker's yeast
- 20-30 g of organic brown sugar
- 100 g of organic soft butter
- 2 whole organic eggs
- 1 pinch of salt
- Organic flaked almonds
Caramelized bananas:
- 4 organic bananas
- 15 g of organic brown sugar (or honey or maple syrup)
- The juice of a small organic lime

Pour the baker's yeast into the lukewarm milk and mix. Let stand 10 minutes.
In the bowl of a food processor, pour the organic cooking matcha, flour, sugar, eggs, salt and the milk / yeast mixture.
Knead at medium speed for 8 minutes.
Then add the soft butter in pieces and knead until the butter is completely incorporated.
Cover the bowl with cling film and let stand for 1 hour at room temperature.
Meanwhile, peel the bananas then cut them in half lengthwise before placing them in a pan, add sugar and lime juice. Caramelize over low heat.
Heat the waffle maker. Place a tablespoon of dough in the center of the hot plates and cook. Watch the cooking, because it is quite fast. The waffles are cooked as soon as they are golden brown.
Serve the organic cooking matcha waffles with the caramelized bananas and flaked almonds.
