A new savory recipe based on matcha tea by our friends at Pazapah! How delicious!

Ingredients
For matcha tea falafels:
- 250 g of organic canned chickpeas, drained from the tin
- 1/2 clove of organic garlic
- 1 teaspoon organic cumin
- 1 teaspoon of organic culinary grade matcha tea
- 30 g organic spinach shoots
- 1/2 organic lemon
For the salad:
- 1 handful of organic lamb's lettuce leaves
- 1 organic avocado
- 1 organic spring onion
- 1 organic yogurt
- 1/2 clove of organic garlic
- 1 teaspoon organic liquid honey
- 1 teaspoon organic ground cumin
- 1 tablespoon organic lemon juice

Preparation:
Using a food processor, blend the chickpeas with the garlic, cumin, organic culinary matcha tea, spinach shoots, lemon juice, salt, and pepper. Shape the mixture into balls.
In a large skillet with a drizzle of oil, fry the falafels for 5 to 8 minutes, until they are golden brown on all sides.
Meanwhile, in a bowl, mix the yogurt with the chopped garlic, cumin, lemon juice, honey, salt, and pepper.
Cut the avocado into cubes. Finely chop the spring onion (white and green parts).
Mix the lamb's lettuce leaves with the avocado and spring onion, then drizzle with a little oil and the remaining lemon juice.
Serve the falafels with the lamb's lettuce salad and yogurt sauce.
