Vegan Dalgona Matcha

Where does Dalgona come from?
A very popular drink from South Korea, Dalgona is originally a whipped coffee, prepared by whisking beaten egg whites and instant coffee to create a beautiful, firm froth, placed on top of a glass of sweetened milk.
Today, Sabine invites us to discover a gourmet variant on the classic dalgona recipe with a delicious matcha dalgona, all in a 100% plant-based version!
What is aquafaba?
Aquafaba is the key ingredient in this recipe: it is one of the best plant-based alternatives to eggs! Very rich in protein, it is obtained by collecting the cooking water from legumes such as chickpeas and whisking it lightly. Once whisked with an electric mixer, it takes on the form of a firm, light froth, very similar to that obtained with beaten egg whites. A very interesting ingredient in plant-based cooking, and also anti-waste!
Vegan Matcha Dalgona Recipe
Ingredients (for a large cup):
- 1 teaspoon of organic premium matcha tea
- 200 ml of organic plant-based milk
- 3 tablespoons aquafaba (or 1 egg white)
- 1 teaspoon organic sugar

Steps for preparing Dalgona matcha:
- In a mixing bowl, whisk the aquafaba (or egg whites) with an electric mixer for about 5 minutes until stiff peaks form.
- Add the sugar and organic premium matcha green tea powder.
- Continue beating the mixture until it forms a stiff froth.
- Fill a large cup 2/3 full with plant-based milk. Pour the whipped matcha froth on top.
Your matcha Dalgona is ready to be tasted. It should be tasted at room temperature to better distinguish the flavors.
