Organic matcha tea and strawberry cupcakes

Strawberry season is finally here, and they smell like sunny days! Sabine and I felt inspired to get into the kitchen and create a new recipe combining strawberries and matcha, following on from the vegan layer cake we enjoyed last year.

Recipe for cupcakes with organic Saemidori matcha tea and strawberries

Ingredients for 10-11 cupcakes:

  • 175 g of smooth organic unsalted butter
  • 80 g organic brown sugar
  • 3 organic eggs
  • 175 g organic flour
  • 1/2 teaspoon organic baking powder
  • 2 teaspoons of organic Saemidori matcha
  • 250 g small organic strawberries (in season)

Ingredients for the frosting:

  • 175 g of smooth organic unsalted butter
  • 300 g organic powdered sugar
  • 2 teaspoons of organic Saemidori matcha
  • 2 teaspoons of organic milk (optional)

Preparation of organic matcha tea cupcakes:

Preheat the oven to 180°C.

Soften your butter in the microwave.

Put the sugar and eggs in your food processor with the whisk attachment. Whisk until the mixture is frothy. Add the flour and baking powder to your food processor. Add the melted butter and mix until you have a smooth batter.

Line your cupcake mould with paper liners. Pour the batter into each liner until it is 2/3 full. Press a small strawberry into the center of the batter (if your strawberries are too large, cut them in half). Bake for about 20 minutes.

Once baked, allow your cupcake bases to cool completely before decorating them, or you risk your decorations (cream or other) melting. Use a piping bag for decoration.

Preparation of the icing:

In the bowl of your food processor, cream the butter. When it is softened, gradually add the icing sugar. Then add the organic Saemidori matcha. Mix for about 5 minutes, until you have a frothy cream. If your mixture is too thick, add 1 or 2 teaspoons of milk. If it is too runny, add icing sugar to thicken it.

Pipe the frosting onto your cupcakes and add your decorations (here, halved strawberries and a small mint leaf).
