The ingredients for 8 matcha tea and white chocolate cookies
- 75g of cold organic butter
- 80g of organic white sugar
- 50g of organic whole cane sugar or brown sugar
- 8g of organic culinary-grade matcha
- 8g of organic premium matcha
- 2g of organic salt
- 1 organic egg
- 150g of organic T55 flour
- 1g of organic baking powder
- About 100g of organic white chocolate

Preparing the matcha and white chocolate cookies
Work the cold butter with the sugars until you get a homogeneous mixture.
Dilute the matcha teas in a small amount of water to obtain a thick paste and incorporate them into the previous mixture. Add the egg, the salt, and mix again.
Finish by incorporating the flour and baking powder, mixing briefly so as not to overwork the dough.
If the latter is too soft to handle with your hands, chill it in the freezer for about twenty minutes.
When the cookie dough is cold enough, form small dough balls of about 50g and then flatten them with the palm of your hand. Place them well spaced on a baking tray lined with parchment paper and place the white chocolate chips on top of the cookies.
Bake at 190°C for 8 to 10 minutes, preferably placing the tray in the lower part of the oven.
Once out of the oven, immediately remove the cookies from the tray and let them cool.
Best enjoyed the same day, but the cookies can be placed in an airtight container and kept for several days. You can even leave them in the fridge and enjoy them cold, it's delicious!
