Organic ultra-premium matcha tea fields on the edge of the erupting volcano!

Come visit the fields of Nishi-san with me, the farmer who produces the ultra-premium organic premium matcha tea for Kumiko Matcha.

At the foot of the volcano:

Located in Kagoshima Prefecture in southern Japan, this terroir is made unique by the active volcano that overlooks it. In the video, you can view the ash cloud in the distance being dispersed by the wind after forming a vertical column.

Once these ashes settle in the fields, they form a unique natural fertilizer! However, don't worry about your ultra-premium organic premium matcha tea, the leaves will be cleaned and the ashes removed. I'll show you how in another video!

Once harvested, the producer first ages the tencha for a few months to make it rounder and less aggressive, then grinds it to obtain matcha.

The second factor that makes Nishi-san's ultra-premium organic premium matcha unique:

In the video above, you can view another factor that Nishi-san is perfecting to improve his ultra-premium organic premium matcha tea: the covers that protect the tea plants.

What is very special, even unique, is that these covers, which are usually black, have a silver colour at Nishi-san's, and it is through details like this that we view Nishi-san's obsession with pushing the quality of his matcha tea to its peak.

And what is it used for?

The main role of these covers is to reflect the sun's rays. This keeps the plants cool, more effectively than black covers, which absorb the rays and create more heat, like a mini oven.

It's all about timing!

Once under the covers, the plant goes into survival mode and forms new shoots that seek out the sun, which puts the plant under stress as these new shoots cannot receive sunlight.

After that, it's all a question of timing, explains Nishi-san. If the plant is covered for too long, it will be damaged, and if, on the contrary, it is not covered, the plant's amino acids will turn into polyphenols.

After the harvest:

After the harvest is over, the field is prepared for the next season by pruning between the plants (you can view the small space this creates in the video).
